Beet greens are delicious, too!

Preparation time: 10 minutes
Cooking time: About 50 minutes
Curing time: Overnight

  • 2 bunches fresh beets (save fresh greens for a stir-fry or soup)
  • 2 cups apple cider vinegar
  • 2/3 cup sugar
  • 1 tsp. cinnamon
  • 1 Tbsp. mustard seeds

Steam beets until they are crisp-tender and remove from heat. Slip off skins when cool enough to touch. Cut into 1-inch chunks.

Mix beets with the remaining ingredients and let stand overnight to cure.

Adjust sweetness or tartness to taste with additional sugar or vinegar.
