Another healthy, tasty recipe from Vineyard Nutrition:
2 1/2 cups fresh fruit: strawberries, peaches, etc.
1 1/2 cup low-fat milk
1 Tbsp. vanilla extract
1/2 tsp. cinnamon, to taste
Canola oil cooking spray
8 slices of 100% whole-grain bread
In a blender or with an immersion blender, blend fruit until smooth.
In a shallow, 9 x 13 baking dish, whisk together eggs, milk, vanilla extract and cinnamon,
Soak bread slices in the milk mixture until saturated, then turn each piece over to saturate the other side.
Heat a large skillet or nonstick griddle on medium heat and spray with a small amount of canola oil.
When skillet is warm, add bread slices.
Cook for 2-3 minutes on each side, turning over with a spatula. Make sure they are cooked through before serving.
Serve, whole or cut in strips or shapes, with fruit sauce.
