Small but mighty, microgreens pack a lot of nutrition into just a few delicious bites. They’re truly concentrated: Nutritionist and dietetic intern Rachel Caine tells us that microgreens have up to 40 times the amount of Vitamins C, E and K, lutein, folate and beta-carotene found in full-grown plants!
These tiny shoots are mild and tenderly crunchy, adding flavor and texture to all kinds of dishes. Use them as a garnish, mix them into salads, sprinkle them on soups and salads, blend them into smoothies—the possibilities are many. Microgreens can also take the leading role in salads and pestos.
